<P>PROBLEM TO BE SOLVED: To provide synthetic cream obtained by emulsifying oil and fat with milk-derived phospholipid and milk protein, and having emulsifying stability under refrigeration and emulsifying stability to temperature variation in an ordinary temperature range. <P>SOLUTION: The synthetic cream has emulsification stability under refrigeration and emulsification stability against temperature variation in an ordinary temperature region, and is produced through the following process: an oil-phase preparation process where the milk-derived phospholipid is added to oil and fat; a water-phase preparation process where the milk protein is dissolved in water; and a pre-emulsification process and a qualification process each of the water phase and the oil phase. <P>COPYRIGHT: (C)2007,JPO&INPIT |
