FIELD: food industry. ^ SUBSTANCE: group of inventions relates to technology for production of flour confectionery products. The methods envisage kneading a dough containing a mixture of prime wheat flour, flour produced from other vegetal raw material, salt, soda, yolks, vegetable oil, phospholipids and water. The vegetal raw material flour is represented by flour of girasol-sunflower which is produced by way of girasol-sunflower preparation, cutting, drying in the microwave field at specified parametres of the process, frying and cryo-grinding in liquid nitrogen. Then one performs dough formation in the form of sheets and baking. Then one produces filling by way of mixing fat, sugar powder, flour and waffle crumb. For filling preparation one performs extraction of cocoa husks with separation of the respective miscella, cutting of girasol or girasol-sunflower or yacon or chicory, its drying in the microwave field under specified process parametres, frying, impregnation with the separated miscella with simultaneous increase of pressure. Then the pressure is released down to the atmospheric pressure and the raw material is being frozen at the same time and cryomilled in medium of evolved nitrogen. Then one performs making waffles from sheets and filling. ^ EFFECT: produced waffles have improved texture, coffee taste and flavour with no coffee added to the formula. ^ 4 cl |
