摘要 FIELD: food industry. ^ SUBSTANCE: invention relates to a technology for complex vegetables processing. The method envisages yacon preparation, its grinding, cavitation extraction with nanostructured water at specified parametres of the process with subsequent separation of phases, tangential microfiltration to produce inulin-containing solution (which may be separated as the end product, concentrated and dried to produce inulin or hydrolised and concentrated to produce syrup), repeated cavitation cake extraction with nanostructured water at specified parametres of the process with subsequent separation of phases, tangential microfiltration, concentration and drying of the second extract to produce pectin and pressing and drying the cake produced after repeated extraction to produce food fibres. ^ EFFECT: method allows to implement complex processing of yacon with high efficiency of its components separation and high purity of finished products.
