FIELD: food industry. ^ SUBSTANCE: invention relates to the manufacturing technique of coffee substitutes. Method of production includes preparation of scorzonera, cutting, drying in microwave field till residual humidity is about 20% and frying. Then one performs frying barley grains, mixing scorzonera and barley grains and the produced mixture cryogrinding in liquid nitrogen. ^ EFFECT: method provides for production of new coffee drink according to a nonwaste technology. |
