FIELD: food industry. ^ SUBSTANCE: invention relates to food industry and represents a method for production of an albumen concentrate. One mixes vegetable albumen raw material sources with water and steam. One performs extrusion in extrusion devices; extraction of the produced highly porous finished product is performed by water-and-alcohol extraction media. The extracted low-molecular substances are separated; the extracted product is dried; during raw material extrusion the extruded mass moisture content is 20-35%, temperature is 120-180C, pressure is 40-120 atm; duration of raw material treatment in the extruder is from 5 to 60 seconds. ^ EFFECT: method allows to perform more complete extraction which allows to produce products with improved organoleptic properties and a lower lipids content (no more than 2%); according to this method one produces a product with a low population of microorganisms. ^ 6 cl, 14 ex |
