摘要 FIELD: food industry. ^ SUBSTANCE: group of inventions relates to the manufacturing technique of dietary flour confectionary products for nutrition of diabetes patients. Method provides for preparation of formula components, cutting of yacon, its drying in microwave field at specified parametres of the process, additional drying by convective method and cryo-grinding in liquid nitrogen to produce flour. Dough making from high-grade wheat flour, yacon flour produced according to specified technology, yolks, salt, soda, vegetable oil, phospholipides and water. Dough is shaped in the form of waffle sheets and baked. Cardamom is extracted by liquid nitrogen with corresponding miscella separation. Then depending on the filling recipe, one undertakes cutting of girasol or girasol-sunflower or yacon or chicory, its drying in microwave field at specified parametres of the process, frying, impregnation with separated miscella with simultaneous increase of pressure. Pressure is reduced down to atmospheric one with simultaneous freezing of raw material. Raw materials are cryo-ground in medium of released nitrogen to produce flour. The flour of girasol or girasol-sunflower or yacon or chicory is mixed with culinary fat, dry milk, sugar substitute "Sladeks" and waffle crumb for filling preparation.
