PROBLEM TO BE SOLVED: To provide a method for producing sugar in excellent productivity, which carries out an enzymatic reaction of cellulase, etc., using a cellulose-containing raw material as a substrate to efficiently obtain sugar. SOLUTION: The method for producing sugar from a cellulose-containing raw material having an ash content in a cellulose-containing raw material of≥10 mass% and a cellulose I type crystallinity represented by the calculation formula: cellulose I type crystallinity(%)=[(I<SB>22.6</SB>-I<SB>18.5</SB>)/I<SB>22.6</SB>]×100 (wherein, I<SB>22.6</SB>is the diffraction intensity of lattice plane (002 plane) (diffraction angle 2θ=22.6°) in X-ray diffraction: and I<SB>18.5</SB>is the diffraction intensity of amorphous part (diffraction angle 2θ=18.5°)) of >33% includes a step (I) for reducing an ash content in the cellulose-containing raw material to <10 mass% and a step (II) for making cellulase and/or hemicellulase act on the treated material obtained by the step (I) to saccharify the treated material.
