PROBLEM TO BE SOLVED: To provide soft caramel giving a sense of a kneaded food material by eating the soft caramel, and using a natural pigment of a food material to be kneaded to give visual pleasure, by taking a new perspective, in view of the fact that conventionally measures or technological innovation for reducing stickiness of soft caramel or soft candy to the teeth due to its peculiar properties are insisted. SOLUTION: The solid soft caramel is obtained by finely cutting vegetables and fruits with caramel dough as the base material to a mass-like solid of an indeterminate form; kneading with 100 wt.% caramel dough, 10-30 wt.% flowing liquid containing a natural pigment a food material has, and eluted when finely cutting, into water added in the finely cutting process; and heating/boiling up the product followed by cooling.
