The present invention describes a collapsing device for formwork tables (5) which can occupy a working position and a folded position to disassemble and transport the formwork table. The device comprises a head (20) and a catch (40) sliding in the head (20), the head (20) being pivotably assembled to a support beam (2) of the table (5). The device comprises first fastening means (50) for the working position and second fastening means (60) for the folded position. The device comprises locking means configured to lock the action of second fastening means (60) so that the catch (40) is not fastened to the head (20) when the mentioned head (20) returns from the folded position to the working position.
