<P>PROBLEM TO BE SOLVED: To provide a yacon fermented beverage that is a beverage comprising a yacon tuberous root part as a raw material, enhances antioxidant activity and improves balance among sweetness, bitterness, acidity, a refreshing feel and ease of drinking. <P>SOLUTION: The yacon fermented beverage is obtained by fermenting a squeezed juice of yacon tuberous root part with Aspergillus awamori. The yacon fermented beverage is obtained by adjusting the amount of yacon squeezed juice to ≤50 vol.% based on the volume of a fermentation container and adding Aspergillus awamori to the yacon squeezed juice. <P>COPYRIGHT: (C)2011,JPO&INPIT |
