Bacteria from family Enterobacteriaceae, belonging to a genus selected from among Escherichia, Enterobacter, Pantoea, Erwinia, Klebsiella, and Raoultella, or products obtained by treating said bacteria, are allowed to act on an organic raw material in a reaction solution containing carbonate ions, bicarbonate ions, or carbon dioxide gas. Said bacteria are capable of producing an organic acid modified so as to have increased phosphoenolpyruvate carboxykinase activation and decreased glucose phosphotransferase activation. |
