PROBLEM TO BE SOLVED: To provide a method for producing bread containing dried fruits in good workability, in which bread has a rich fruit flavor without a dry feeling, has a moist and soft eat feeling, has volume, and is inhibited with caving/cave-in and aging. SOLUTION: In producing the bread by preparing bread dough by using a sponge dough method, the bread dough is prepared by a process A of adding dried fruit paste together with oil-and-fat in the middle of the mixing/kneading process of major dough after preparing the sponge dough. Here, in the process A, it is desirable to add 5 to 50 mass% dried fruit paste to cereal flour constituting the bread dough. Also the process A is desirably performed by mixing the oil-and-fat with dried fruit paste in advance.
