摘要 The invention relates to a method for carrying out a sensory profile in order to define and evaluate the typicality of wines. According to the invention, the method consists in defining a general sensory profile as typicality reference for wines in a certain category, carrying out the sensory profile of a wine the typicality of which is desired to be established and comparing the sensory profile thereof with the typicality reference to test the typicality of said wine within the context of its category. Defining a general sensory profile as typicality reference for wines in a certain category implies the selection of quality wines from a certain category by hierarchization procedures, subjecting said wines to a sensory analysis of the general parameters and specific parameters of each selected wine, the respective parameters being then quantized as scores and expressed as diagrams and tables.
