FIELD: food industry. ^ SUBSTANCE: invention refers to a fruit processing technology. A product is manufactured by preparation of apricots, cutting, convective drying to intermediate humidity, boost when heated, depressurisation to ensure liquid phase state of water for blowing of apricots, final drying in the microwave field, if necessary, addition of flavour additives and packing in a polymer or combined package in the anoxic environment. ^ EFFECT: use of the invention enables making a food substance of apricots exhibiting a unique harmony of organoleptic properties of popcorn and fruit salad. |
