FIELD: food industry. ^ SUBSTANCE: group of inventions relates to technology of production of diet flour confectionary for feeding patients with sugar diabetes. Methods include preparation of composition components, cutting of yacon, its drying in SHF field at specified process parametres, roasting and cryogrinding in liquid nitrogen obtaining flour. Dough is made from wheat flour of superior quality, obtained by described technology flour from yacon, yolks, salt, soda, vegetable oil, phospholipids and water. Dough is formed in form of sheets and baked. Basil is extracted with liquid nitrogen with separation of corresponding miscella. Depending on composition of filling girasol or girasol-sunflower or yacon or chicory are cut and dried in SHF field at specified process parametres, roasted, soaked with separated miscella with simultaneous increase of pressure. Pressure is dropped to atmospheric with simultaneous freezing of raw material and its cryogrinding in medium of released nitrogen obtaining flour. To obtain filling flour from girasol or girasol-sunflower or yacon or chicory is mixed with cookery fat, dry milk, sweetener "Sladex" and wafer crumbs. Filling is spread on wafer sheets and cut with production of wafers. ^ EFFECT: obtained wafers have improved consistence and coffee taste and flavour without having coffee in composition. ^ 4 cl |
