FIELD: food industry. ^ SUBSTANCE: invention refers to a manufacturing technique of coffee substitutes. It involves preparation of dandelion root, cutting and drying in the microwave field to residual humidity approximately 20 % at microwave field power to ensure dandelion root heating to inside temperature 80-90C for at least 1 hour, and roasting. Also barley, chestnut and soya grains are roasted. Dandelion root, barley, chestnut and soya grains are mixed in the mass ratio 7:7:2:4, and cryogrinding of the prepared mixture in the liquid nitrogen medium follows. ^ EFFECT: offered method allows to prepare a new coffee beverage of alternative raw materials with applying a non-waste technology. |
