PROBLEM TO BE SOLVED: To provide a heat sterilizer eliminating excess and deficiency of heat to an object to be sterilized, and performing proper heat sterilization. SOLUTION: This heat sterilizer for heat sterilizing an object 2 to be sterilized by jetting high-temperature water to the object 2 to be sterilized in a sterilization tank 1 detects temperature in the sterilization tank 1 and controls heat supply to the high-temperature water so as to bring temperature in the sterilization tank to a target value. In more details, the heat sterilizer controls heat supply to the high-temperature water by setting a time t required for from changing a heat supply amount to the high-temperature water until to exerting an influence on temperature change in the sterilization tank, and preceding only the time t than tank temperature becomes a target value. The heat sterilizer performs control of increasing heat supply to the high-temperature water, when formula [target value>present tank temperature+(present tank temperature-tank temperature before unit time)×(t/unit time)] is satisfied, and decreasing heat supply to the high-temperature water when formula [target value
