The method involves cutting the spine on both sides in the areas of the pinbones, particularly in their outlet areas below the fish skin. The surface of the fish is interrupted for the deformation of the fish flesh, particularly of the surface area. Both sides of the main bones, are arrested by meshing from the abdominal cavity in the sections of the spinal cuts.
