A process for production of vintage strong white wine of Marsala type, providing for preparation of half-dry strong wine material from the variety Rkatsytely, half-sweet strong wine material from the variety Sukholymanskyi white, and grape fruitage from the grape of variety Sukholymanskyi white with concentration of solids of 60-65 % with its second boiling to 68-73% of solids, which after cooling and racking off is boiled again on “direct fire” till raising of solids of 6-8 %, the wine materials is blended in the ratio of 1:1, 6 % of grape fruitage is added with the content of solids of 68-73 %, the blend is fortificated to the conditions of the finished wine, the finished blend is clarified by treatment with adhesive substances, racked off and pointed at heat treatment, which is realized by cyclic method during 4 months, after heat treatment the wine is aged during 2 years, at the end of second year of ageing the wine is pasted to bottling stable state, racked off, filtered and after resting during 10 days - bottled. |
