摘要 A method of producing a fermentation-based product, such as ethanol, comprises fermenting a sugar-containing medium with yeast in the presence of an aliphatic or aromatic monoaldehyde or dialdehyde, a formaldehyde-releasing compound, or a combination thereof, in an amount sufficient to reduce or control a bacterial population in the sugar-containing medium. The additive may enable reduction or elimination of antibiotics for this purpose, while showing reductions in percent infection, process variability and interference with yeast viability.
