FIELD: food industry. ^ SUBSTANCE: group of inventions relates to technology for production of flour confectionery products. The methods imply preparation prescribed components, girasol cutoff, its drying in the microwave oven at the set process parametres, roast and cryo disintegration in liquid nitrogen with flour getting, dough preparation from the wheat flour of premium quality received according to the described technology of a flour from girasol, yolks, salt, soda, vegetable oil, phosphotides and water, its formation in the form of sheets and baking, extraction of a vanilla with corresponding miscella separating, cutoff of girasol or girasol-sunflower or yacon or chicory, its drying in the microwave oven at the set process parametres, roast, impregnation by separated miscella with simultaneous pressure increase, dump of pressure to atmospheric with simultaneous raw materials freezing and its cryo disintegration in the environment of the allocated nitrogen with flour getting, its mixing with culinary fat, powdered sugar and a wafer crumb with getting of a filling and formation of waffles from sheets and a filling. ^ EFFECT: produced waffles have improved texture, coffee taste and flavour with no coffee added to the formula. ^ 4 cl |
