FIELD: food industry. ^ SUBSTANCE: invention may be used at meat - processing facilities. The method envisages "Selenpropioniks" dietary food supplement addition to minced meat raw material during the salting process in an amount of 18-20 ml per 100 kg of original raw material. The supplement is produced by way of cultivation of Propionibacterium shermanii propionic bacteria of strain KM -186 in a nutrient medium based on curd-whey and sodium selenite.
