摘要 Wine production is one of the most important agro-industrial activities. The quality of the grapes produced in a given vineyard depends on how the vine adapts and responds to the climate and soil type. The management of this quality is a fundamental aspect of wine production. This invention describes a method for monitoring the production of grapes based on UV-VIS-SWNIR spectroscopy (ultraviolet/visible/short-wave near infrared), and how to obtain and process information on the physicochemical characteristics of the grape from these data. Based on this invention, the production manager has information to: determine the uniformity of a given grape in the vineyard; divide the vineyard into lots on the basis of the characteristics of the grape; monitor the development and maturation of the grape, detect areas of the vineyard with specific or anomalous features; follow the development of existing metabolite profiles in the grape.
