Provided are a ground meat product, which sustains the original texture thereof as a ground meat product even after increasing the blending ratio of a soybean protein material for satisfying economic and nutritional needs; and a method for producing the same. Provided is a method for producing a ground meat product which contains meat and a soybean protein material, characterized by comprising: a step for preliminarily mixing the soybean protein material with a protein-crosslinking enzyme in the presence of water to give a mixture; and a step for mixing said mixture with the meat to give a kneaded dough. |
