PROBLEM TO BE SOLVED: To provide a substance production method capable of easily improving a substance production efficiency of a cell, a new use of erythroascorbic acid, and a method for producing erythroascorbic acid in high efficiency. SOLUTION: There are provided: a method for producing a target substance by using a substance producing cell, which includes a production step to produce the target substance by the substance producing cell in the presence of erythroascorbic acid as a cell activation agent, and a recovering step to recover the target substance produced by the production step; a cell proliferation promoting agent containing erythroascorbic acid in an amount effective for promoting the proliferation, and an expression promoting agent containing erythroascorbic acid in an amount effective for promoting the expression; and an erythroascorbic acid production method including formation of erythroascorbic acid by bringing ascorbic acid-decomposing bacteria into contact with ascorbic acid or its dehydroascorbic acid in the presence of ubiquitin, and recovery of erythroascorbic acid from a reaction system after the contacting step.
