Provided are a yeast capable of efficiently producing ³-glutamylcysteine, a method for producing a yeast with ³-glutamylcysteine accumulated therein, and a method for producing a yeast extract by the use of the yeast. The means for resolution comprises breeding a yeast having a ³-glutamylcysteine-producing ability and having resistance to cerulenin, cultivating the yeast in a medium to accumulate ³-glutamylcysteine in the yeast, and extracting it in hot water to produce a yeast extract.
