PURPOSE: A gochujang using a sweet potato and a method for producing the same are provided to help a user to manufacture excellent gochujang with a taste which is mixed with a salty taste, a sweet taste, and a savory taste. CONSTITUTION: A high-moisture sweet potato is cleaned and is boiled by heating it. A malt extract is obtained by dipping malt into loess water and filtering it(S1). Glutinous rice powder and the sweet potato with the malt extract are mixed and ripened under 28~40°C for 8~10 hours(S2). Soybeans powder, paper powder, soy sauce, salt, grain syrup, and fermented Salicornia herbacea liquor are added into the ripened material and ripened(S3). |
