<P>PROBLEM TO BE SOLVED: To provide a method for producing dried noodles without using oil, and also producing flat, thin and new noodles spread by hand. <P>SOLUTION: This method for producing the dried noodles includes cutting out noodle strips from noodle dough obtained by kneading, rolling the noodle strips to obtain noodle strings producing gluten, bringing the noodle strings to further thin noodle threads, and spreading the noodle threads followed by drying. In more details, the method includes applying starch powder 15 to a noodle thread material 17 to be the noodle threads in a previous step of rolling molding of rolling molding with a roller to obtain the noodle threads, and pressing the starch powder 15 into the noodle thread material 17 by the rolling molding so as to obtain the noodle threads 16. <P>COPYRIGHT: (C)2011,JPO&INPIT |
