PROBLEM TO BE SOLVED: To provide a sugar compound which shows high surface activity by a little addition comparing with a conventional surfactant which contains one chain and one hydrophilic group, in which a molecular design is easy, and which is useful for a use as a surfactant which contains two chains and two hydrophilic groups in which a hydrophilic group and a hydrophobic group respectively are unsymmetrical. SOLUTION: The sugar compound is shown by a general formula (1) and a structural isomer thereof. In the formula, R<SB>1</SB>is a≥1C or more alkyl group, R<SB>2</SB>is an alkylene group, R<SB>1</SB>-CH-CH-R<SB>2</SB>- is a 9-25C hydrocarbon group, R<SB>3</SB>is hydrogen or a methyl group, Z is a sugar residue, C<SB>n</SB>H<SB>2n+1</SB>is a straight chain alkyl group, and n shows an integer of 1 to 20.
