摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing functional decomposed sesame paste comprising enzymatically decomposing sesame oil-squeezed meal not effectively utilized, wherein the functional decomposed sesame retains its flavor, has a natural antioxidant effect of an unsaturated fatty acid such as a linoleic acid, sesamol, sesaminol and/or sesamin mainly composed of a lignan analogue, contains a lot of minor ingredients such as essential minerals and vitamin E, and is effectively usable as a food raw material or detergent rich in functionality such as prevention of a life style disease, aging, and arteriosclerosis or hypertension, skin beautifying effect, or prevention of decrease in cell function. <P>SOLUTION: The method for producing functional decomposed sesame includes: subjecting hard plant tissues of the sesame extracted oil meal to enzymatic decomposition utilizing enzymatic reaction of various kinds of enzymes while synergistically acting with the action of a mechanically pulverizing device so as to decompose cellulose, protein and a phytic acid to improve the utilization ratio of the minerals; maintaining integrity of flavor; and adding trehalose as necessary to prevent syneresis and heighten the added value so as to generate the functional decomposed sesame as a functional food raw material contributing human health and environment. <P>COPYRIGHT: (C)2011,JPO&INPIT
