PROBLEM TO BE SOLVED: To provide a method for easily manufacturing a microcapsule coated with chitosan, and the microcapsule with secured safety by the method. SOLUTION: A hydrophobic core substance is dispersed in the acid solution of chitosan to prepare oil-in-water type emulsion of the hydrophobic core substance, the emulsion and the anionic polymer of polyacrylate or its partially neutralized matter are mixed and phase separated, then alkali metal salt of carboxylic acid is added to harden a coating film and the microcapsule is manufactured.
