PROBLEM TO BE SOLVED: To provide a nutritional composition including a large amount of highly viscous soluble fiber. SOLUTION: A protein for viscosity modification application of a composition includes at least one of a viscous soluble fiber gum, pectin,β-glucan, a viscous fluid and carrageenan, wherein the protein is at least one of a wheat protein, an egg protein, collagen, a whey protein, casein, a soybean protein, a pea protein, a muscular protein, gluten, a fibrous protein, a silk protein and hydrolysates of the same. The nutritional composition including a large amount of the highly viscous soluble fiber can be applied for prevention or treatment of such as metabolic syndromes and diabetes, and lowering blood cholesterol level.
