PURPOSE: A processing method and a product thereof are provided to enable that the taste and nourishment can be maintained and that the density between the fiber of the jerky is low. CONSTITUTION: A processing method of a soft jerked meat comprises next processes. A material meat is sliced to the thickness of 6-7mm and a board-shaped meat is generated. The process this is desiccated after aging the meat of board-shape under the specific condition, and of desiccating to the state before being utterly built. With the process in which the density between fibers is low by a constriction roller and having a plurality of separate spaces(112). The process of the meat of the board-shape processing is desiccated utterly and packed and shipped. In the third process, the constriction roller has an embossing compressive plane, the meat of the board-shape is processed through, and finally the second process is utilized and the density between the meat fibers is low. |
