A source using a kimchi juice as matured in a low temperature atmosphere and a manufacture method thereof are provided to keep a taste and a smell of kimchi, a nutrition of pyogo by separating kimchi juice from a low temperature matured kimchi and mixing pyogo powder with the kimchi juice. In a source using a kimchi juice as matured in a low temperature atmosphere and a manufacture method thereof, a chinese cabbage is salted before seasoning elaborately and spice is added. The chinese cabbage with salted seasoning is ripened in the low temperature less than 15‹C over 3 year, and The kimch juice is pieced out by a hand and separated from the ripened kimchi, and the kimchi juice of 27~33 weight% and pyogo power of 67~73 weight% are mixed. |
