摘要 <p><P>PROBLEM TO BE SOLVED: To provide a method for washing vegetables, which does not reduce a commercial value even with passage of several days after washing and reduces the number of bacteria in high efficiency. <P>SOLUTION: The method for washing vegetables includes a step for washing raw materials, a cutting step, a step for washing after cutting and a rinsing step. The step for washing raw materials washes harvested leaf vegetables without cutting them. The step for washing raw material washes leaf vegetables for a washing time of≥2 minutes and≤7 minutes in an aqueous solution of sodium hypochlorite at≥40°C and <46°C. The cutting step cuts the leaf vegetables washed by the step for washing raw materials. The step for washing after cutting washes the leaf vegetables cut by the cutting step in an aqueous solution of sodium hypochlorite.
