摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing bean jam which enables production of bean jam having body taste and flavor and containing dietary fiber and polyphenol while having feeling on the tongue and meltability in the mouth like those of strained bean jam. <P>SOLUTION: The method for producing bean jam includes: a bean boiling step S1 for well boiling raw material beans; a soaking-in-syrup step S2 for making sugar penetrate into the beans boiled well in the bean boiling step S1; a classification step S3 for classifying the beans after boiled and soaked in syrup into kernels and husks; a pulverization step S4 for pulverizing the husks classified in the classification step S3 each into a size almost equal to that of the particle of the strained bean jam; and a strained bean jam-kneading step S5 for heating and stirring a mixture of the kernels classified in the classification step S3 and the husks pulverized in the pulverization step S4. The strained bean jam-kneading step S5 includes admixing sugar liquid obtained after adding sugar into boiling liquid produced when well boiling the beans in the bean boiling step S1 to soak the beans therein. <P>COPYRIGHT: (C)2011,JPO&INPIT
