PROBLEM TO BE SOLVED: To provide a technique for continuously producing so-called bioethanol by ethanol fermentation of a biomass as a starting material and optional distillation of a product, wherein the technique improves fermentation efficiency and reduces fermentation time and energy consumption compared with conventional techniques. SOLUTION: There is provided a vacuum fermentation system comprising a raw material charging tank 10 to temporarily store a fermentation raw material and charge the raw material to a fermentation tank, a vacuum fermentation tank 20 to perform fermentation of the fermentation raw material in an evacuated state, a fermentation product recovering tank 30 to temporarily store a fermentation product recovered from the vacuum fermentation tank 20, a fermented mash recovering tank 40 to temporarily store a fermented mash recovered from the vacuum fermentation tank after completing the fermentation, and an evacuation device 50 to suck air in the system and keep an evacuated state. The suction power of the evacuation device 50 is used for performing a process to charge the fermentation raw material from the raw material charging tank 10 to the vacuum fermentation tank 20, a process to recover the fermentation product to the fermentation product recovering tank 30, and a process to recover the fermented mash to the fermented mash recovering tank 40 after completing the fermentation.
