PURPOSE: A manufacturing method for hot pepper paste and vinegar hot pepper paste using corn flour is provided to improve a taste of the hot pepper paste while reducing a manufacturing period of the hot pepper paste by adding wheat koji. CONSTITUTION: A manufacturing method for hot pepper paste and vinegar hot pepper paste includes the following steps: manufacturing steamed corn flour by steaming and cooling corn flour after adding water; manufacturing fermented corn flour by aging the corn flour in wheat koji with Aspergillus oryzae by aging the corn flour for 20 ~ 25 days in 28~32°C; aging the corn flour after adding red pepper powder and starch syrup in the aged corn flour materials; and adding vinegar in the materials. The corn is white glutinous corn. |
