PURPOSE: A method of preserving fish with salt and yacon is provided to use yacon juice for preserving fish with salt to improve the taste for a longer time. CONSTITUTION: A method of preserving fish with salt and yacon is prepared by a step of taking out the insides of a fish and clean with cold water at 0 to 15 degree Celsius; spread yacon juice inside the fish; seasoning material is scattered inside the fish; seasoned fish is refrigerated and aged for 5 to 30 days at 0 to 10 degree Celsius. The seasoning material consists of bamboo salt(40 to 80 weight percent), thick salt(15 to 50 weight percent), and sugar(1 to 10 weight percent). |
