<P>PROBLEM TO BE SOLVED: To provide a new food having a structure of peculiar multiple textures attracting attention by its taste. <P>SOLUTION: This method for producing the food having the multiple textures includes: (1) providing a dairy material, (2) freezing by cooling the dairy material to ≤-2°C temperature, (3) aerating the frozen dairy material, (4) shaping the above aerated frozen dairy material, and (5) depositing the above shaped aerated frozen diary material on or between one or a plurality of layers of a food material which is not the above aerated dairy material. The aerated dairy material has ≥20 Stevens hardness at 5 to 10°C temperature range, and ≥0.90 water activity (a<SB>w</SB>). <P>COPYRIGHT: (C)2011,JPO&INPIT |
