<p><P>PROBLEM TO BE SOLVED: To provide process cheese products having improved storage properties, and also to provide a method for producing the process cheeses products. <P>SOLUTION: By regulating the free amino acid content of process cheese products to 0.15% or less and adjusting pH thereof to 5.5 or less, process cheese products having good storage properties can be provided. Thus, process cheese products having improved storage properties, compared with the existing products, can be provided. Under more severe conditions such as distribution at room temperature, remarkable effects of preventing tissue degeneration and inhibiting microbial proliferation are observed in the process cheese products, compared with the existing products. <P>COPYRIGHT: (C)2011,JPO&INPIT</p> |
