PROBLEM TO BE SOLVED: To provide a method and a device for manufacturing a liquid food filled in a vessel, achieved in the favorable gas replacement efficiency of replacing gas in a head space of a vessel with inert gas and excellent in the economical efficiency, safety and convenience of gas replacement. SOLUTION: The liquid food filled in the vessel is manufactured by blowing immediately before closing the opening 16a of a bottle vessel in which the liquid food is filled in by a plug-closing machine 14, nitrogen gas to the opening 16a at an angle of -5 to 90 degrees to the horizontal surface of the opening 16a from the backward direction relative to the advancing direction of the vessel by a nitrogen gas replacement device 100 to replace the gas existing in the head space of the vessel with the nitrogen gas.
