PURPOSE: A Kimchi containing sesame powder, a preparing method thereof and health functional food containing thereof are provided to improve blood glucose and cholesterol levels. CONSTITUTION: Sesame powder, cayenne pepper, garlic, green onion, and ginger are mixed together to make spice. The spice is put into the salted cabbage and mixed up. One or mixture of cabbage, white radish, green onion, young radish, and cucumber are the main ingredients for Kimchi. The particle size of sesame powder is 500μm to 1000μm. The sesame powder is produced by grinding in a pulverizer for 1 to 5 minutes with 1500rpm to 2000rpm. |
