<P>PROBLEM TO BE SOLVED: To provide hand-rolling style boiled noodles having appearance and palate feeling similar to those of hand-rolled noodles, and having such characteristics as to have Bachi (deformed parts) at both ends of respective noodle ribbons, unlike those of mechanically produced noodles: and to provide a method for continuously producing the rational and safe hand-rolling style raw noodles suitable for mass production of hand-rolling style boiled noodles. <P>SOLUTION: The method for producing hand-rolling style boiled noodles comprises the following processes: a noodle dough block preparing process comprising adding water to noodle-dough raw material and kneading the dough; a noodle strip-forming process comprising rolling the obtained noodle-dough block with pressure; a noodle ribbon-forming process comprising cutting off the obtained noodle ribbons with a cutting blade; a noodle ribbon drawing process comprising drawing the multiseriate noodle ribbons using a hanging bar; and a Bachi-forming process comprising cutting off the drawn noodle ribbons so that the Bachi parts are formed at both ends of the noodle ribbons. The hanging bar used in the noodle ribbon drawing process comprises an upper hanging bar and a lower hanging bar each having an angular tip part at its top surface and shaped into sword-shaped long plates. The sword-shaped long-plate top surface has the angular tip part with its tip angle of 40-70°, and the slanted surface of the triangular part of the plate as a significant part is preferably curved outward. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
