PURPOSE: A method for preparing soy sauce is provided to obtain soy sauce with unique flavor, taste, and nutrients of pepper which have not found in general soy sauce using red pepper fumigated with steam. CONSTITUTION: A method for preparing soy sauce comprises the steps of: fumigating pepper; adding fumigated pepper to the soy sauce and then aging; separating peppers from soy sauce and removing soy sauce from the pepper; and adding the separated soy sauce to the matured soy. |
