<P>PROBLEM TO BE SOLVED: To provide gel-like food having nonconventional novel palate feeling and simply producible: and to provide a method for producing the gel-like food. <P>SOLUTION: The gel-like food is produced by gelatinizing a mixture comprising insoluble components of a cross-linked gelatin having an insolubilization ratio of 2-30 wt.%, and acidic polysaccharide, and includes the insoluble components of the cross-linked gelatin in its inner part. The method for producing gel-like food comprises: making the cross-linked gelatin having the insolubilization ratio of 2-30 wt.% and the acidic polysaccharide coexist in water whose temperature is adjusted to a temperature at which the cross-linked gelatin and the acidic polysaccharide are meltable; gelatinizing the mixture of the soluble components of the cross-linked gelatin and the acidic polysaccharide; and including the insoluble components of the cross-linked gelatin in the inner part of the gel of the mixture. <P>COPYRIGHT: (C)2011,JPO&INPIT |
