PURPOSE: A method for making leaf mustard kimchi using leaf mustard and aralia cordata thunb is provided to add active ingredients such as saponin. CONSTITUTION: A method for making leaf mustard kimchi with aralia cordata thunb comprises: a step of washing 100.0 of leaf mustard and pickling in salt water for 4 hours; a step of washing 20 weight parts of aralia cordata thunb and pickling in salt water for one day; a step of removing water from pickled leaf mustard and aralia cordata thunb; a step of mixing 2 weight parts of live shrimp, 15 weigh parts of salt, 14 weight parts of salted anchovies, 5 weight parts of red pepper powder, 1.2 weight parts of garlic, 1.2 weight parts of ginger, 2 weight parts of onion, and 3.5 weight parts of red pepper with 8 weight parts of glutinous rice paste to prepare a seasoning filling; and a step of mixing the leaf mustard and aralia cordata thunb with seasoning filling. |
