<p><P>PROBLEM TO BE SOLVED: To accelerate softening of ingredients in cooking to reduce the cooking time. <P>SOLUTION: A pair of electrodes 20, 21 provided on a lid 18 is inserted into a heating container 15 with water and ingredients contained therein. A high-voltage pulse source 19 is turned on by a shockwave generation control means 22 to apply a rapidly rising pulse voltage of, for example, 1μs between the pair of electrodes 20, 21 to generate shockwaves. Cells of the ingredients are instantaneously broken and softened by pressure of the shockwaves, by which the later heating time is reduced to drastically reduce the cooking time. <P>COPYRIGHT: (C)2011,JPO&INPIT</p> |
