PROBLEM TO BE SOLVED: To sufficiently remain moisture and delicious flavors within a cooking material in a heating cooker. SOLUTION: The heating cooker 9 includes: a cooking chamber 1 for storing the cooking material 3 placed on a cooking pan 2; a door 12 for taking in/out the cooking material 3 to/from the cooking chamber 1; an upper face heating means 4 for heating the upper face of the cooking material 3; and a cooking pan heating means 5 for heating the cooking pan 2. From first arrival time until the completion of cooking, control is performed so that the cooking pan 2 maintains a first arrival temperature. The temperature of the lower face of the cooling material 3 is continuously increased until the first arrival time of the cooling pan 2, and only the surface of the cooking material 3 rapidly starts to grill. Thus, a protein component constituting the cooking material 3 forms a thin film on the surface of the cooking material 3 so as to suppress evaporation of the moisture and delicious flavors included inside.
