摘要 PURPOSE: A method for producing food materials using green tea and a method for producing kimchi using the food materials are provided to maximize the functionality of the green tea and satisfy the taste of a customer. CONSTITUTION: Green tea leaves are firstly washed by soaking the leaves in soaking liquid. The firstly green leaves are steamed at salty water of the salt density of 1-3% at 80 to 100 degrees centigrade. The steamed green tea is secondly washed in the soaking liquid. The secondly washed green tea is cut to 2-3 mm after removing moisture. The cut green tea leaves are cooled and dried at -45 to -35 degrees centigrade. The soaking liquid is mixed with water to have condensed products of 0.1 to 0.2 weight% of dried bamboo leaves and raw garlic, DL-a-tocopherol of 0.2 to 0.5 weight%, and cystein of 0.2 to 0.4 weight%. Kimchi is made by using the food material made of the green tea leaves of 3 to 15 weight%.
